Recipe of the Month


I discovered this recipe 10 years ago when I was watching the Food Network. The recipe is courtesy of Stephanie Tyler and is one I make frequently, especially at holiday time. Super easy and a big hit with all ages.

Stephanie Tyler’s Chocolate Surprise Cookies

1 (18 ¼ oz) box milk chocolate cake mix (recommended: Betty Crocker)

½ cup vegetable oil

2 eggs

1/3 cup (8 oz) package toffee chips (recommended: Heath Toffee Bits)

3 tsp. toffee cappuccino mix (recommended: Hills Brothers English Toffee)

  • Preheat oven to 350.

  • Combine cake mix, oil and eggs in a bowl and mix well.

  • Stir in toffee bits and instant coffee mix.

  • Drop my teaspoons on ungreased cookie sheet and bake 8 – 10 minutes.

  • Remove from oven, let stand on cookie sheet for 2 minutes, then cool on racks.

  • Makes approx. 1 dozen

Note: I always double this recipe. For those who love to bake ahead, the cookies freeze really well.
