Recipe of the Month

My sweet mother-in-law shared this one with me years ago. It’s a particular favorite of my hubby’s and very easy to make. Easy to double for a crowd too.
Tamale Pie
1 lbs ground beef (or ground turkey)
½ onion, diced
1 1-lb can diced tomatoes
1 ½ tsp chili powder
1 tsp salt
freshly ground pepper
2 small cans sliced olives (optional)
1 8-ounce can cream style corn
1 8-ounce box (Jiffy brand, if possible) corn bread mix
Preheat oven to 400
Brown meat and onion. Drain.
Add tomatoes, salt and pepper, and chili powder. Simmer 10 minutes then transfer meat mixture to an oven-safe dish (approx. 10 inches)
In a separate bowl, follow package directions for corn bread mix.
Add corn to cornbread mixture
Top meat mixture with corn bread mixture
Bake 30-35 minutes
**NOTE: I always add more seasoning than the recipe calls for (usually garlic powder or onion powder or cayenne if you like it spicy). Feel free to add whatever you want.
