    My sweet mother-in-law shared this one with me years ago. It’s a particular favorite of my hubby’s and very easy to make. Easy to double for a crowd too.Ā

    Tamale Pie

    Ā 

    1 lbs ground beef (or ground turkey)

    ½ onion, diced

    1 1-lb can diced tomatoes

    1 ½ tsp chili powder

    1 tsp salt

    freshly ground pepper

    2 small cans sliced olives (optional)

    1 8-ounce can cream style corn

    1 8-ounce box (Jiffy brand, if possible) corn bread mix

    • Preheat oven to 400

    • Brown meat and onion. Drain.

    • Add tomatoes, salt and pepper, and chili powder. Simmer 10 minutes then transfer meat mixture to an oven-safe dish (approx. 10 inches)

    • In a separate bowl, follow package directions for corn bread mix.

    • Add corn to cornbread mixture

    • Top meat mixture with corn bread mixture

    • Bake 30-35 minutes

    **NOTE: I always add more seasoning than the recipe calls for (usually garlic powder or onion powder or cayenne if you like it spicy). Feel free to add whatever you want.
