Recipe of the Month


I first had this dish when I went to visit my cousin in Idaho. It is SO good and perfect for company. It's not exactly "diet" friendly, but it's wonderful when the need for comfort food kicks in.

Creamy Sausage and Tomato Pasta

2 tsp olive oil

3 chopped shallots (okay to use onion)

2 large cloves garlic, chopped

1 lbs Italian sausage, casing removed

1 cup whipping cream

2 14-oz cans diced tomatoes in juice with Italian seasoning

1 tbsp dried sage

½ tsp crushed red pepper

salt & pepper to taste

1 lb Fettuccini or rigatoni noodles

freshly grated Parmesan cheese

  • Heat oil in skillet over medium heat. Add onion and garlic; sauté until just beginning to soften (about 3 minutes).

  • Add sausage and saute until brown.

  • Add cream and simmer 5 minutes

  • Add tomatoes, sage, red pepper, salt & pepper. Simmer at least 15 minutes (better if simmered longer – at least an hour)

  • Cook pasta & drain. Add pasta to sauce and sprinkle with cheese just before serving.
