Recipe of the Month

If you’re like me, you’re always searching for an easy yet tasty recipe. My hubby is not a fan of salmon, but he has used this marinade over chicken. It’s very tasty, and good served with steamed veggies and/or rice. This recipe made it’s way into my kitchen via my good friend Dianne.

Baked Salmon

3 tbsp. olive oil

3 tbsp. lemon juice

1/3 cup Dejon mustard

1 tbsp. crushed garlic

*Note: There is enough marinade for at least 2-3 pieces of salmon.

Mix all ingredients together in a bowl.

Put salmon on foil-lined baking sheet and season with salt & pepper.

Top salmon with half the marinade. Bake at 400 for 15-20 minutes.

Top with remaining marinade and serve.
