Recipe of the Month

I admit, I make this one at least 2-3 times a month. It’s hearty and packed with protein, very Weight Watchers friendly, and freezes like a dream. Not sure where this one came from, but if you like chili you will like this one.
Taco Chili
1 lb fat free ground turkey
1 small onion, diced
1 can kidney beans
1 can black beans
1 can corn (or 1 - 15 ounce bag of frozen corn)
2 cans diced tomatoes
1 packet taco seasoning
diced Bell Pepper and jalapeno (both optional)
**DO NOT DRAIN BEANS OR CORN
Brown meat with onion; season with salt & pepper if desired.
Stir in taco seasoning packet.
Add remaining ingredients to pot.
Simmer for 15-30 minutes (or more)
Serves 4
Note: I’ve made this without the corn. I’ve made it with 2 cans of black beans because I didn’t have any kidney beans. It’s a very flexible recipe so add whatever sounds good to you. Thanks to my cousin Lori for suggesting the bell pepper and jalapeno, which really sends this over the top in the yummy department.
