Recipe of the Month

I’m not sure where this recipe came from, but it’s one I make often. SUPER easy and very tasty. As a side benefit it’s very filling and Weight Watchers friendly. Just 1 point per serving (1 ½ cups).
Slow Cooker Lentil Soup
2 carrots, peeled and diced
2 celery stalks, diced
1 medium onion, diced
2 cloves minced garlic
1 bag dry lentils, rinsed
3 bay leaves
½ tsp dried Thyme
¼ tsp pepper
6 cups chicken broth
2 cups water
4-5 Canadian bacon, diced (optional)
Side note: The original recipe called for ½ tsp. salt but I have omitted it because the soup was TOO salty. I’ve also stopped using the bacon, as the soup is fantastic on its own. Just omit it and use vegetable stock, for those vegetarians in your life.
Add all ingredients except Canadian bacon to crock pot
Cover and cook on low for at least 6 hours (longer is fine)
Uncover and stir in bacon
Cook through for another 30 minutes
To thicken, remove 1 cup and puree, then stir it back into the soup (I rarely do this, as the soup thickens on its own as it cools
I always serve this cornbread....but feel free to go crazy with yummy bread or even homemade croutons on top.
