Here’s the perfect yummy side dish for your Thanksgiving meal. Much tastier (and richer) than the usual sweet potato side dish you might be used to. I have no idea how or where I came across this recipe, but it's worth making. Very decadent!
Sweet Potato Casserole
Preheat oven to 350.
Potatoes:
6 cups (mashed) canned sweet potatoes (1 40 oz can = 3 cups)
1 cup sugar
2 sticks butter
2 tbsp. vanilla
4 eggs
Beat all ingredients together and place in butter coated 9 x 13 baking dish.
Topping:
2 cups brown sugar
2/3 c. butter
2 cups chopped nuts
Mix ingredients together with a fork and sprinkle over potato mixture.
Bake for 45 minutes-1 hour.
