Recipe of the Month

This is probably the best waffle recipe I’ve ever come across. It’s a big hit in my house because there’s no milk required. Perfect for a Sunday morning brunch or weeknight breakfast-for-dinner. Another go-to that my Mom shared with me.
Famous Belgian Waffles
2 cups Bisquick baking mix
1 egg
3 tbsp. vegetable oil (corn or canola works fine too)
1 1/3 c. Club Soda
Mix all ingredients well.
Make sure the batter is thick (add more baking mix if necessary).
Pour into greased Belgian waffle iron. Cook for 4 ¾ minutes or until golden brown.
Top with fresh fruit, syrup or powdered sugar. YUM!
