Recipe of the Month

There’s a story behind this recipe, which was given to me by my cousin Dee. We were visiting her a few years ago and as usual we were all craving something sweet. She whipped up this masterpiece in the matter of a few minutes, and ever since then it’s our last minute go-to for something scrumptious. We nicknamed it Pake, because even though you make it in a pie pan, it has more of a cake consistency. As long as you have a few staple items on-hand, this is a no-brainer. Enjoy!
Dee’s Almond Pake
1 cup flour
1 cup granulated sugar
2 eggs
1 cube butter (room temperature)
1 tsp almond extract
Slivered almonds.
Mix together flour and sugar, then cut in butter. Add eggs and almond extract, mixing well until there are no lumps.
Pour mixture into a greased pie plate/tin and sprinkle with slivered almonds and a bit more sugar. Bake for 30 minutes at 350, or until done. Serve warm.
