Recipe of the Month

Here’s the perfect side dish for your Easter meal. I’ve made this many times and it is SO good. I have no idea where I got the recipe from (a magazine…years ago), so thank you to whomever shared this yummy dish!

Scalloped Potatoes

¼ c. chopped onion

2 tbsp. margarine or butter

2 tbsp. flour

¼ tsp. salt

1/8 tsp. pepper

1 ¼ c. milk

1 c. shredded cheddar cheese

3 medium potatoes, peeled and thinly sliced (approx. 3 cups)

  • Cook onion in margarine/butter until tender.

  • Stir in flour, salt, and pepper.

  • Add milk. Cook and stir until thickened and bubbly.

  • Add ¾ c. cheddar cheese and stir until melted. Remove from heat.

  • Place half the potatoes in a greased 1 quart casserole; cover with half the sauce. Repeat the layers.

Bake uncovered at 350 for 35 minutes. Uncover, add remaining cheese, and bake for another 30 minutes or until the potatoes are tender.
