Recipe of the Month
Here’s a perfect one for company….it can be made ahead of time and it will serve a lot of people. If you’re a biscuit and gravy lover, this one is for you. Here’s a spin on that timeless classic (another one of my Mom’s recipes):
1 dozen eggs – hard boiled and grated
1 lb. bacon, fried and crumbled OR 1 pkg. Little Smokies, browned and cut into pieces
3 cans Cream of Mushroom soup
1 ½ cans of milk
1 ½ cups Mayo
1 ½ bunches green onion, chopped
Sliced mushrooms (as many as you desire)/optional too
Mix all ingredients together and bake at 350 for 30 minutes or until heated through. Great served over English muffins or biscuits.
This can be frozen as well, then thawed and reheated.
